In 1980 Schuhbeck took over the Kurhausstüberl in Waging . He soon became the driving force in the business and won over the guests with his culinary skills. The "Kurhausstüberl" became an insider tip for Munich and Salzburg celebrities and advanced from a village inn to a top restaurant. Schuhbeck earned a reputation as a "celebrity chef" that was frequented by politicians, television stars, and executives.

He has been running a party service since 1990, with which he supplies high-class events such as the Federal Chancellor Festival, the Ball des Sports or the Echo award ceremony.

At the end of the 1990s he founded the gastronomic company Schuhbecks am Platzl GmbH. Today, these include the Orlando restaurant, a wine bistro, a caterer, a cookery school, a spice shop, a tea shop, a chocolate shop and an ice cream shop . Except for the party service in Riem , all facilities are in downtown Munich at the Platzl . At the beginning of 2002 he closed the Kurhausstüberl in Waging. [5]

In 2003 he opened the Schuhbecks restaurant in the Südtiroler Stuben in Munich, which was awarded a Michelin star until 2017. [6] Schuhbeck frequently hired different chefs here. [7]

Another company was Schuhbeck's Check Inn GmbH (founded in 2001) with the restaurant Schuhbeck's Check Inn [8] at Egelsbach Airport near Frankfurt am Main and Schuhbeck's Check Inn estate Bachgrund in Büttelborn-Worfelden. [9] However, the latter location was closed again in February 2012 after almost a year of operation. [10] Shortly thereafter, after Schuhbeck's departure from management, Schuhbeck's Check Inn GmbH filed for insolvency on March 21, 2012. [11]

At the end of 2006 he opened the Galeria Kaufhof “Schuhbecks Schmankerl Shop” in the Kaufinger-Tor-Passage on Munich’s Marienplatz . This facility offers Schuhbecks condiments, ice cream flavors, wines, mustards, gift baskets and more. In 2007/2008 he designed the menu for entrepreneur Jürgen Drexler on the “Blue Star Train”, a former train of the Trans-Europ-Express .

At the end of 2016 he opened Schuhbecks Fine Dining in Boettners in the former traditional Boettners restaurant. [12] The restaurant was to be the luxury label among Schuhbeck restaurants; [13] In 2018, the restaurant under chef de cuisine Maurice Krieg was awarded a Michelin star. [14] In early 2020, Schuhbeck closed the restaurant. [15]

Schuhbeck also runs the Teatro Spiegelzelt in Munich. [16]

Schuhbeck has been the chef for the FC Bayern Munich soccer team for many years away from home in the Champions League and Europa League .
